Dutch oven chicken and mushroom

Started here,

We substituted home grown chook for the bluefoot, Pieter van Gent "Mudgee White Port" for the Vin Jaune and dried Chanterelle for the Morel Mushrooms

Didn’t want a runaway Keg (or Kamado), so I used the gas to brown

Deglaze with the plonk and add the soaked mushies

Image

Throw the chook back in and add the double cream and onto the Keg

Image

Sometime later, I way overcooked time wise, great taste and easy to do, well worth a go with thighs or Maryland next time.

I was just thinking that'd be good with Rabbit.

And yes, great for camping, dried mushroom...easy to have on hand!

Any of you blokes with a food dehydrator, mushrooms are easy and add great flavour to almost anything, I blitz them into a powder with some dried carrot, parsnip and cellery......instant heavy duty stock!
