Tasmanian Dogwood for smoking?
Hi all.
I've got some beef ribs I'm gonna do low & slow on the weekend, but I haven't got much available at the moment for the smoke.
I've got some big bits of Tasmanian Dogwood down in the garage, but a quick search of the forum doesn't find any mention of it. I was just wondering if anyone had tried it?

Dogwood? Never heard of it....maybe someone eles name for a type of timber....such as its a dog of a stuff to cut or something along those lines...but generally if its a hardwood, it should be ok.

Dogwood is its common name down here, and in the literature - Pomaderris apetala. I believe it only grows in Tas and NZ though, which may be why you guys on the big island haven't heard of it.

Well, I gave it a go and I reckon it's pretty good
Nice smokey flavour, and a pleasant change from the Hickory chips I'd used previously. I'd certainly use it again.

Nice short ribs there Brekel, nice smoke ring too.
Our timbers are a lot different to the ones from the US as ours are mostly from the Eucalyptus varieties here, and i think even our cedars are a lot different.
Climate locations like Tassie may dictate other varieties such as the Tassie oak for example..whereas Queensland Tropics are softwood palms.
I'm not a fan of woodchips for smoking, much prefer fist sized chunks of whatever wood is going...if the fire is set right for smoking, chunks smoulder nicely giving long lasting smoke.

I agree. I bought a pack of hickory chips when I first started, and I find they're ok for a quick bit of smoke on a short cook, but not for a slow cook. And I'm not so keen on the Hickory flavour with beef.

Mesquite is good with beef .

Yeah I wanted to try some mesquite, but the local places seemed to be out of it apart from the chips. I'll give some a go soon.
