Talk about flying blind! I had never even heard about it till Kristin ask me to cook it. She is trying to make us eat healthier. She does not like Feta, so Monterey Jack was substituted.

On Memphis Pro, 350°for 30 minutes. Will post a finished photo in awhile!

most of the time ive had spanakopita we have used ricotta cheese.

or for something a little different, try haloumi cheese. thats an awesome cheese

I forgot, has ricotta with 2 eggs mixed in too! It did not call for mushrooms, I was gonna add them, and then I forgot!

Seems a little anemic to me, but what do I know, I never even heard of the dish till 2 hours ago...About 40 minutes in the pit!

Will show a cut piece as soon as it cools.

I sure could see being a vegetarian if it all tasted this good! I may have to quite blowing them off! Some outrageous flavor for just dough, eggs, cheese, spinach, onions, garlic a tad of S n P and some butter!

What I will say is the next one is gonna be even better when I add 50/50 ground lamb/sausage and mushrooms!

if you really want to step them up a bit, add some diced capsicum and chicken.

Nah leave it vego! Add a few toasted pine nuts and some nutmeg. Very good.

This one was pretty easy.

1 large onion diced
2 eggs
1 Tsp minced garlic
1kg Spinach rinsed & chopped ( I used a package of frozen.)
1 bunch green onions chopped
1/2 cup ricotta cheese
1 cup cubed feta ( I used 2 cup shredded Jack)
1/2 cup chopped fresh parsley
8 sheets phyllo dough
EVOO
Butter


Brown onions, garlic and green onions & parsley. Cool. Mix eggs, ricotta and feta. Mix with cooled onion.

9x9 dish. lay a sheet of phyllo dough, brush with melted butter, repeat 3 more times. Add mixture, spread evenly. Repeat the phyllo sheets for top.

Yes, all together. 350°F for 30-40 minutes...
