Trying my hand at Pastrami
So I probably spend more time on this forum at work than I actually work at work.
Have decided I will try a Pastrami this weekend. Taking the easy route and went for a corned silverside and it is in the fridge soaking in water overnight. Will chuck the rub on it tomorrow morning before work and plan to cook it on Saturday.
The rub is from Muppets Pastrami thread.

This is a fairly thick silverside. Does it look ok or should I trim it down a bit?
Did you leave the fat on the top or trim off?

I'd trim most of it off, thick fat shrinks and messes with the rub
