Got a couple of places where I go looking for the weird and wonderful, and no shock, they know what I like....so I get a call this morning and an hour later I scored big time!

MMmmmm....and "Allow about a pound and a half per person" That's 750 grams!...I wonder how much JD you wash that down with!

Good score Chris. Reminds me a bit of the old CWA cookbook Jans Nana left her. Nearly every second recipe starts with " find a clean kerosene drum "
How do you reckon using dark rum instead of JD would go in the rib sauce? Thinking for pork ribs rather than beef.
Bentley was wondering about kiwi Hungis.............. From the Pit BBQ instructions it looks like they do it in the good old USA too!

Dark rum has molasses ,JD has corn syrup and maybe some Maple Syrup

Saw some nice looking spiced dark rum at Dan Murphys in Duro rd Freo yesterday when I was making notes for Santa.
The Hangi is more of a steaming process, but it sure as hell is the same idea!
