1st overnighter on the ProQ Frontier

Post by 2browndogs »

I did a test run with a small pork - 1kg - was labelled scotch by the butcher, but looked more like a rolled loin to me, with a fat cap attached.

Anyway, it was well into the stall (69C) when i called it a night at midnight, and the ProQ was stable at 225F. But, and there's always a but! at some point the fire went out. :x (not enough coals, or vents too shut or....?) Woke up at 4am and piggie and cooker both on about 45 C. Into the fridge with it and back to sleep.

I don't know what temp it got to, but reckon it would've cooked for about 8hrs at 225F. So, what should i do with it ? Just reheat in the oven in foil for a while ??? Is there any point in trying to get it to pulling stage ?

Cheers

Just heat it gently, you'll be able to tell where it's at when it's warm!

Although if it was a loin as you suspect, it won't pull!

Thx Chris, it was a 3kg log - i lopped a third off so it had the same girth, just shorter. But a scotch shouldn't have a fat cap (which i removed for the cook)

I will try reheating at 110 - 120 and see how it goes.

They do have a fat cap, It's mostly removed
