I find that spraying fine mist of water on top of bread a couple of minutes before it goes in the kamado improves the appearance of the crust. Much simpler (although not as effective) as the traditional egg-wash.

I can highly recommend Smokey-O. I had the pleasure of visiting Riverside Brewing during the Sydney Craft Beer Week (about a month ago) and Smokey-O's tucker was great, as was the beer of course.
