Re: Chioptle and Ancho

Harris Farm have canned chipotles in adobo sauce. I've got a can, but haven't tried it yet, so can't report on the quality.

Re: Disaster Bay Chipotle Sauce

I've been a great fan of Disaster Bay for decades (ever since they started out) and their chipotle sauce is awesome, if you can get your hands on it. The chilli wine makes an excellent present for anyone that like desert wine and chillies. It is not just regular wine flavoured with chillies, but rat...

Re: Aldi 3 meat roast [ turducken ]

I did a couple of the fresh ones and subsequently another couple of the frozen variety.

Here is a description of my first cook of the fresh one: http://www.aussiebbq.info/forum/viewtop ... 60i#p69960

I find that spraying fine mist of water on top of bread a couple of minutes before it goes in the kamado improves the appearance of the crust. Much simpler (although not as effective) as the traditional egg-wash.

Re: BBQ Caterer - Sydney

I can highly recommend Smokey-O. I had the pleasure of visiting Riverside Brewing during the Sydney Craft Beer Week (about a month ago) and Smokey-O's tucker was great, as was the beer of course.

Re: Gaganis Charcoal

I've been cooking on various kinds of charcoal and coconut robot turds for a while now. I decided to add some Heat Beads to the mix the other day and was put off by the disgusting stench they put out in the first few minutes. They are far from flavourless when used in the snake configuration. They s...

Re: Meat grinder/sausage stuffers

the Ebay style ones just don't have enough juice to do anything decent. It's not so much about the power as much as it is about lack of precision engineering in the grinding parts. I have a sub-$100 eBay special that has plenty of grunt, but the grinding plate and knife assembly tolerances as well ...

Re: We're off to UG's BBQ School :-)

We need a Sydney UG school! There's a joint on Willoughby Road in Willoughby, called BBQ School. They do sessions around Sydney and Hunter and now also Melbourne and Brisbane. No idea how (or even if) they compare with what Chris offers. I only live about 100-150m as the crow flies from the BBQ Sch...

Re: Hotrox charcoal now at Woolies

The deal just got sweeter. Woolies are selling two 5kg boxes for $10. That's 10kg of lump charcoal for $10. Available until 4 Nov 2013. Northbridge, NSW have no stock left as of this afternoon- I cleaned them out and bought all 10 boxes. They all just fit into one of them newfangled trolleys with th...

Re: Just had to buy the Coolabah Mini Spit

There's not much difference between the four options. I mounted mine at the lowest setting, initially because I expected that configuration to be the sturdiest. As it turns out, that's plenty high. In general, as long as your food clears the edges of the pit, you might as well go as low as possible ...

Re: Tap King coming soon..

Tried on two occasions. Awful both times. Buy a growler or four and have it refilled. Places like Beer Cartel tend to have quite a lot of variety on a rotation basis and once you find your favourite tipple, you can go and get refills straight at the brewery, like Riverside Brewing. If we're lucky, g...

Hotrox charcoal now at Woolies

A while ago Bunnings used to stock Hotrox charcoal in 3kg boxes. It went on sale and Bunnings no longer stock it. Earlier this week, I was at Woolworths in Norhbridge and noticed a pile of BBQ goodies between the deli and the meat sections. They had 5kg boxes of Hotrox charcoal for $7.99 in that pil...

Re: Bunnings new toys

There are at least two products in the Hot Shots range at Bunnings. One is the "BBQ Fuel" as pictured, which I imagine is similar to heat beads. The other product is "Natural Lump Charcoal" - I haven't paid too much attention to it though, since the pricing made it a lot less att...
