Hi,new guy here and I AM REALLY EXCITED, first to find this foum and second bcos this is my first smoker build.I would like this to be a hot /cold smoker.I hope you can advise me.This is the unit after striping out compressor

I have started to strip it down to see what insulation is in it. Doors are foam so
taking that out

some thinners takes all that glue off real nice.
Cut the top off and put some wheels on

OK now I need advise, the stainless interior sits on a foam base

I guess this is gonna have to support the weight of whats in the smoker. The foam is 75ml
thick so I thought hebel might be good replacement?
The plan so far is:
cold smoke source = Smoke Daddy magnum
heat = electric element and pid.. I am totally lost here, seems a pid from auberins might be the go but what model? Best element local?
box inside is 1.5m height 1m wide .6 deep
Some Questions;what insulation to repak with? is bunnings earthwool ok?
Vents.. maby a pipe with ball valve at the bottom?
the door seal oven rope or silicon..aussie suppliers?
hi temp silicon? any recomended brand or supplier?
thought i might use this flue from sausage maker? http://www.sausagemaker.com/41400andnbs ... amper.aspx
the racks are plastic coated but look like steel can i peel the plastic off and use them?

We love a good smoker build!

The plan so far is:

heat = electric element and pid.. I am totally lost here, seems a pid from auberins might be the go but what model? Best element local? I'd talk to a local Commercial Kitchen equipment second hand supplier, you might be able to get the workings out of an old bread prover/proofer

the door seal oven rope or silicon..aussie suppliers? I use an Oven parts supplier, they have a flat glass tape that I use for sealing doors and as a kamado gasket. PM me if you can't find that, I have it by the roll.

Earth wool is a great product, it is bonded using a more natural process as apposed to standard glass wool insulation like pink batts. (Doesn't contain added formaldehyde, acrylics, bleaches etc, etc.
although I believe it also comes with an increased price tag.
It also will not encourage growth of mold, fungi and bacteria.
In essence they will both Do the same thing. Just check the "R values" and the thickness of the batt to find something you will be able to install in the walls. Can't wait to see the finished product!

Thanks for the replys, Chris I already had ordered the smokedaddy before I even found the cabinet..the wonders of internet shopping after a few beers eh? lol. I am not really in a position to search for secondhand stuff so would like to source a new element,pid and ssr ,would appreciate any input on those items. I got hold of a brass 2" ball valve for the air in, will that be enough? For the flue I was going to get that one from sausagemakers but for the $12 item the freight was $50 so I might keep looking, do I need a damper on the flue if I can control air in with the ball valve? For the door gasket I am gonna try to source a fiberglass tadpole rope gasket from a Sydney supplier Associated Gaskets , let you know how that goes. for the shelves you suggest have them plated but in what ? Nath thanks for feedback on earthwool I have removed all the foam and replaced with earthwool. For the base I used the 75mm hebel blocks, they fit perfect and now this fridge has a base like a pizza oven good thermal mass?

The Magnum will serve you well.
When its puffing away you can turn the air pump off and it will chug away all night.
What temp is the Earthwool safe to?

Hey Tich, Couldn't find much on the earthwool but your generic rock and glass wool is good in the 200-500 C range. Chips or Chunks for the Magnum? I have a few logs of Pecan I was thinking of putting thru a chipper.

I use pellets in mine with some sawdust. so a fine chip I believe.

A few small pieces of Charcoal gets the magnum going quickly

Those snags look great, I hope to get into a bit of sausage making. After no success trawling the net for a flu, I went to a local sheet metal shop and they whipped up this neat100mm flu kit for me. All stainless,300mm high $90. Should I cut it shorter, does flu length make much difference as this will be heated by electric element? Any suggestion on the element size, wattage, type ect. would be appreciated, the cabinet is about 1.5 cubic meters. Door gasket is turning out to be a bit tricky, found some very nice ones here http://api.viglink.com/api/click?format ... 2279459648 but when I tried to order it they refused to sell to Australia, and were kinda rude about it also. I think I am onto a silicone stove gasket that will attach the same as the old fridge seal, its out of stock so waiting on that. Cheers till nxt update

That's a neat looking Flue.
I used seal from BBQ galore, self adhesive and works a treat.
Big Green Egg seal if I remember

That's a good link Chris, I got a quote from a similar mob in Sydney and it was over $300. I will get a quote from your link, in the meantime I took titch's advice and went to BBQ galore and got some fiberglass rope and adhesive, will do a test. They didn't have the self adhesive one titch. Because of the two large doors I need 8 metres of gasket and if it sticks on well it will work out at $80, so big saving.
Chris any word on the new Maveric stock?

Thanks Chris, mavricks arrived also thanks. Working on the doors and a blower for the air intake so I can use the cabinet as a dehydrator as well. Almost ready to heat it up, any advice on how to season it?

put an air blower on it so I can make jerky and dried stuff

Got some pecan logs and put them through a mates chipper.. this should keep me going for a while also
went and visited Emberpac and got some nice charcoal for starting the smoke daddy.

Turned it on and set it to 250 f got there in about 40 min looked like it would go hotter
