Hope the Funeral went smooth and was a celebration..
I run a snake of heatbeads, about 110/120c for around 5 hours ( Costco rear shanks are huge )
I have started using Cherry chunks and its appears to carry a sweetness

Sorry to hear of your lockdowns again Titch, lucky you grabbed those shanks when you did. Still I can't understand them placing the entire state in level 4 lockdowns for 19 cases...they've just got to manage it better.
The Funeral was very small with just family, it's how Mum wanted it, she never wanted a major fuss with lots of people.
I'll have to check out Costco shanks nxt time I'm there, only go there about 4 times a year. I've been hangin for years to get a couple of huge slabs of pork ribs from Costco, at least they've got meat on theirs. I also notice they sell Boston Butts which is different to the scotch roasts we were using as an substitute.
One thing I've promised myself I was going to do this summer is to cook more fish on the Weber....but due to having to tend to family issues with Mum in Aged care etc., I've rarely lit them up let alone cook much on it. I'm just so exhausted that motivation isn't here right now.
I can't cook too much lamb as the Mrs hates the smell of it, coming from Japan, Lamb is too gamey a smell and taste to her so if I want to cook lamb, it's usually small cuts like loin chops or small roasts and cooked seperately from her food
