I've been happily making pizzas at around 250c on the dial but last night I was determined to do one at 400c. I burnt the bottom slightly on the first one but the top was perfect. But being in the oven for only a minute, the bottom shouldn't have gone black, it's never looked like doing that before.
Also, I don't think our dough came out quite right, it had trouble rising so that didn't help. I put the next one on a tray for a minute or so, then took the try off for about 30 seconds, which worked OK. Still learning !

I've never had the bottom burn before the top, usually the top goes first for me, but perhaps you had an inferno which was starting to die down?
I use the little Max oven once a week and have to say I've never made two batches of dough he same
Yesterday's batch was too wet and the dough ended up being a little too soft. I'm going to go back to 60%-65% hydration because with Caputo flour that's what has worked best for me.

spot on mate, I lit it too early and had it running at 400 for a good hour before the pizzas were ready. (I blame the wife)
By then it was a red hot fire ! No flame over the top, just real hot. I think I left it burning in the middle too long too. I should have pushed it to the side earlier. It took a long time to drop in temp after I'd finished too. Oh well, There's always next time and the pizzas were still good, even a bit of char underneath is tasty.

I have to save for my USA trip in October then this is next.
There is no way I will get a 5th 'bbq' past the wife...
She goes back to the UK in February for 6 weeks to see the family...guess what I am winning at the same time!?

will make the argument that I got rid of the gas bbq (not used it in years anyway).
Will get it as soon as she goes so i get 6 weeks practice in.

Make sure you give them a call ahead of time to make sure they have stock when you need it

How's Max going? Planning on getting a Maximus in the next fortnight or so. Too bad they don't stock the stand anymore!

Got one of these a few weeks back, absolutely fab to use. The best home made pizzas as voted by the whole family!!
Anybody know of where a suitable cover for the Maximus can be bought - or thoughts on whether it even needs a cover for being left out in the elements.

How’s everyone’s Maximus es holding up? I notice the last post was more than two years ago.
Were there any real issues with cracking, or running them at 400-450?
Any way I am looking at a new wf oven mainly for pizza and bread, but also as a general bbq.
