no crackling

hi we cooked a pork roast today on a premium baby q left on hot for 15 minutes preheat put roast in left on high 250 degrees as high as q went for 25 minutes then turned down four marks about half way alas no crackling any ideas or is it impossible to get crackling on a baby q thanks for any help

G'day EN,
The baby Q will certainly get hot enough for good crackling and here are a few things that you can do to get it. I've lifted these ideas from the wise folk around here over the years.

1. Invest in good quality meat. Typically, supermarket meat leaves a bit to be desired in the fat and taste regard.
2. Make sure the fat skin is scored.
3. Pour some boiling water over the skin, it will open up the gaps where you have scored.
4. Pat the pork dry with some paper towels.
5. Lightly oil the pork, apply salt, and give the pork a good rubbing to get the salt into the scoring.
6. High heat (which it sounds like you did) for 1/2 an hour without lifting the lid, then turn the heat down to your desired cooking temp and cook to your desired level of doneness.

Pork crackling remains a tough one for me to crack (no punb intended) for me as well..
All of the point mentioned by Lovey are correct (and yet at times I still ahd to pulll teh crackling of and heat separately...
I have a feeling itis very much to do with the pork you get from your butcvher or supermarket... Doesnt make it more easy to consistently get good crackling tho...
I tried the hairdryer as well... mixed results (and the wife watches you liek a hawk when that thing goes near meat)....

thanks for your info yes crackling is a tough one not to worry I will have to keep trying I have had results in different bbqs

Vacuum packed pork is particularly hard to crack too (too much moisture)

Haha I still give it a red hot go every time I cook a pork roast...
Hmmm The best one I had was on my gas weber.... Not in my Weber Q... May have to experiment a bit more.
And yes I agree "fresh" from the local butcher gets better results than a vacuum packed one from the bigger stores ...

Having no experience with the "Q" but assume this would work

I have done this in the Weber with charcoal and it works a treat - would probably do well on gas - it needs a dry heat.

I normally unwrap the pork and put it in the fridge on a plate over night - this will dry out the skin - usually around 16 hours and nothing more than around 24 hours. Then score and salted and on the Weber - it turns out a really good crackling.

thank you for the link i have no problem getting great crackling using charcoal i got crackling o my spirit the other
week using the rotissary i will try all the different ways the great people on here have suggested to find the right one for me
