Going deep. A custom built smoker

Ok. I don't do things by half. Never have. Never will.

I have decided to build my own smoker to meet my unusual specifications and size requirements.

I have planned this bad boy out and am now at the purchasing stage for materials.

Here are my questions

1.) What thickness of steel and what type should I get? I was thinking 7-8mm medium grade all over. Is that fair enough?

2.) Is there anywhere in Australia that I can buy the probes, hinges, baffles etc?
