Beef ribs on the Weber

A few beef ribs with a simple salt and pepper rub.

Set up the weber for a snake, looking for 245f for a 7-8hr cook.

Weber held the temp perfectly, had the vents about half open and top fully open. I checked the temp with a digital thermometer and it came in 3f off the weber which was pretty good.

Five hours in they were starting to look good.

Pulled the off after about 7hrs and this was the result. Best ribs I've done so far.

I grabbed some the other week, and though I thought the first time I might struggle to get them right, they turned out insane. Will do again for sure

Mate where on earth did you get ribs like that? That looks awesome!

I have not been able to find ribs like this anywhere. Instead I get the small and puny boned "american style" ones???

What / how did you ask the butcher to cut it?

Do you mind sharing your exact method to cook as well? Eg - did you do any basting, wrapping, water trays etc?

are you talking about pork ribs?
the pics are of beef ribs, and all the ones I've cooked are like those in the pic,
even the ones from woollies

Well I promised myself to defrost and smoke these beef short ribs up on the WSM 18.5 this weekend seeing as this is the start of my holidays where i can just sit back and relax a bit.

Then light up the WSM using Heatbeads coconut shell charcoal

Then place said ribs on WSM after filling waterpan full of near boiling water to minimise heat loss through using cold water.
Now for the long 6 hour wait[emoji15]

Hmmmmm....still waiting for these bloody ribs :x ....they were a lot bigger than I normally do, and I put them on the WSM at 12.15pm this arvo, it's now 7.08pm and I'm still waiting for them to be ready....I've wrapped them up in foil now and placed back on the WSM...hopefully that might just finish them up nicely.
They better be worth it :twisted:

They're taking as long as a brisket...almost :roll:

Ok I'll get back to you all when they're ready.....if i don't fall asleep in the mean time...might die of malnutrition :mrgreen:

Well finally they were done.....eaten and i can barely walk.
I must say though...these larger beef ribs were a challenge and i missed my timing more than i had in some time.
I also think that while good, the coconut shell charcoal for long cooks fall short...prefer to use the standard heatbeads.

The meat was so juicy, but i felt it could've gone another half hour or so but these took over 7 and a half hours as it was....and we were bloody hungry.
Very tasty...very moist...worth the wait[emoji4]

Great looking ribs. Well worth the wait. Where did you get them from?

It's good to try different fuels but like yourself with Q's like the kettle I keep coming back and use the normal heat beads.

How did the neighbours cope with all those wonderful food smells?

Yeah....sorta getting my head around it but i do need to look at the entire forum as well due to doing admin work....not much to do apart from keeping the whip onto Paul[emoji23]

The ribs i've been getting from Woolworths Kingsgrove....great shott cut ribs
