Very successsful first cook. Pork scotch neck 2 kg, simple sugar and spice rub. Started at 8am with a mix of charcoal and heat beads about 90/10. Not sure why I added the heat beads...I just did! Fornetto ran steady on 225F all day. I did no basting or looking until at 170F I wrapped it in foil with a dash of beer in it. Back on and I opened some vents for a little more heat and took her off at 203IT. 45 minutes rest, pulled with two forks, fell apart really, and had in soft tacos with a home made sauce. lettuce, slaw, mint and corn kernels. Cooked the corn in the coals, could not believe how many coals I still had left. I reckon I could have managed a 14 hour cook on this baby without adding anymore.
I am massively happy with the performance of this smoker.

LOl, next time buddy! Also left out one detail, I used cherry tree chips for the smoking side of it. From an ornamental cherry in our backyard that I pruned a year ago in the vain hope I would use them one day. Didnt use too much for a first go, maybe half a cup. I do think it added to the taste, there was a sweetness to the meat that was of a different level to the sugar in the rub.

Looks like that worked and well done.
I always add some heatbeads to a Charcoal slowish type cook, they seem to control the temp
