Laz2212 wrote:Hi guys,

Very new to BBQ and looking to get a dragon with the current sale at Barbecues Galore. One question - I'm interested in cold smoking salmon and/or trout....can one do it in the dragon?

If so, any recommendations for method/recipes?

Thanks!
I used mine for for cold smoking last week using a punched-in colander as a smoker. I just sat the smoker on the charcoal grate and placed my bacon on a rack on the grill.

I started by using redgum pellets, but I had to keep burping the Dragon to release the heat even with a slow smoulder. I switched to sawdust and didn't get much heat at all. The bacon turned out really well. It's the one application where the insulation of the Dragon will work against you, but with the right fuel on a cool day you can use it to cold smoke.

Aarrghh..

I left the vents open and then got distracted during heat up.

By the time I got to it the temp dial had maxed out and flames were coming out the top vent. I had the smoking stone in and a pizza stone on the grate and still.

I feel like such an idiot, I'm worried about the plastic and the top vent because it was obviously so hot.

In any case it's going to be ages until it all cools down enough to inspect the damage. Pray for me

Yeah I was tempted to mess with it but I decided to just shut it down and walk away.

I think.. It's going to be OK and I've just given it a pyrolytic clean..

I think it'll be fine Niko. The flames coming out of the top may have just been there and not near the fire (they tend to go where the oxygen is). My guess is that there will be no damage, other than maybe your pizza stone.

My first attempt at low and slow on the dragon went well. Eight hour pork shoulder over robot turds and hickory chunks.

Bottom vent about 5mm open, top vent set to just the notches, held a fairly steady 120C. Hand on my heart, it was the best pork I have ever eaten.

You know what, it is fine. Thank goodness! And, it did actually get a really good clean from the carbonisation of bits stuck on.

The smoking stone was unscathed, my pizza stone was already split in two (but it turns out a pizza stone doesn't have to be in one piece to work anyway).
