Local tuna, so rare to get some that the Japanese haven't bought.
They eat %80 of the worlds seafood, but they didn't get this bit!

So. So. Good!
The rice should be a little firm and a little sweet with a tart edge, a bit sticky but the grains should be separate.
You don't get sushi rice when you eat sushi out here in Oz, and sushi is a rice dish not a seafood dish.
The rice in the pic is really special, imported from a specific place in Japan and this seasons rice, Wayne.
Getting influenced by Asia has its good and bad points, I am a real rice snob now too. :oops:

Mmmmm, pig middles. *drool*

So I gave the Captain's brined chicken a go, I've never brined anything before. The result was spectacular, will be doing this for many times to come.

Cooked a rack of pork spare ribs, 2kg piece of beef spare ribs and a 2Kg cut brisket this weekend.

The pork ribs came out too peppery. I used too much. The brisket was juicy except the bottom muscle was a little tough. Next time I will cook a whole brisket. Beef ribs came out juicy but not as smokey as I would have liked.

Was able to keep the temp around 250 - 275 f.

Those ribs look good, another hour maybe and they'd be fall apart!
