I got 2 of these..

Fairdinkum they cut anything i throw at them. Specially beef and pork. Cheap, easy to replace and only got them cause i saw a butcher using one. comes sharp but i put mine on the stone and its insane how sharp it is now.
Butcher said to me they are great! Sharpen the crap out of them and use them for 6months full time then throw away and buy another lol. Ive had my 2 for a year and they are better then when i first got them. Brilliant big handle too, makes it easier to use your wrist when cutting.
Hope that helps bud.

Re: Whats the Best Knife for Cutting Raw Meat?
Kiwi brand knife from the two dollar shop sharpened on a cheap sharpener that takes slivers of metal off. Razor sharp and you can buy one every week and still be ahead of almost any other brand
Re: Whats the Best Knife for Cutting Raw Meat?
Oh really? I have some Japanese master crafted knives that are 27 years old, I have used them, enjoyed their precision and deftness, their absolute razor sharpness all those years and they will be here doing it all long after I am gone. Kiwi use s2 steel, it is about 10% as good as the knives I am referring to, so there is definitely more than one approach to life regarding knives/tools.trentski wrote:Kiwi brand knife from the two dollar shop sharpened on a cheap sharpener that takes slivers of metal off. The best knife for cutting raw meat is whatever knife you feel does the best job. This is subjective in the extreme. Some people are satisfied with the $2 knife and others are on a lifelong journey to find the best cutting edge. Based on the parameters given in the original question, neither approach is wrong as long as you are happy with it. I know I would prefer the Japanese knives Buccaneer referred to, rather that the $2 shop one though.

Looking at grabbing a knife while I'm in Japan in next month... going dizzy just looking at all the different recommendations onlineBuccaneer wrote:Oh really? Have been told I don't have time for a sneaky trip into Sakai while we are in Osaka but I've scoped out a few other knife joints near where we are staying that I might have to make sure we wander by
Re: Whats the Best Knife for Cutting Raw Meat?
A stiff boning knife for slicing through meat, a flexible boning knife/filleting knife for fat and a serated bread knife for slicing cooked meat. Other than that a chefs knife for cutting down cartilage. The price you want to pay will depend on how you treat the knives.

I've been thinking about this Mr J, and for sure Bjorn will have some Sakai makers in the store. Also looked up a Japanese map, bit of a trip from the CBD which is where i thought he was located because of the business name. Take your passport for duty free prices mate!SilentBoB wrote:Looking at grabbing a knife while I'm in Japan in next month... going dizzy just looking at all the different recommendations onlineBuccaneer wrote:Oh really? Cheers mate. Looking forward to getting over there and checking out Bjorn's shop. Speaking to some Japanese friends last night and they know the area well. They said there's quite a few decent knife shops around that area so will hopefully be a bit competitive on price too.
