Thought we could contribute here to help us all locate sources of the cuts we require.
I had a yack with Russell at The Beef Shop on Albany Highway Gosnells.
They buy in quality whole carcasses and break it down themselves and are willing to prepare whatever you need, including whole briskets.
He will charge $9/kg for angus briskets.

I had trouble describing what exactly is required for getting boston butts but he is keen to learn and willing to supply.
The beef I have bought there has been really good, so far.
I've got a Aussie brisket on the bone in the fridge, last one was really good.
$6.99 but a LOT of bone weight.

If anyone can get pics and more info to him that would benefit us as a group.

Even if you are NOR give them a ring because they do a market every weekend, at Stirling maybe?
You can express your interest and then order and pick up there.
I have no relationship with the business in any way other than have shopped there a few times.

Interesting - thanks for the heads up

I was just thinking the other day it would be good to have a state-based resource where we can have a list of various suppliers across WA for meat/charcoal/etc as it can be hard to find decent prices in Perth and where some will excel on a particular cut or animal they will lag on others

I actually popped in to Farmer Jack's the other day and was pleasantly surprised by pork collar butt at 8.99/kg and big beef chuck roasts around $8/kg I think

I've been working with a Local Abattoir/meat supplier over the last month to get them to cut US spec Briskets, the first kill and cut is next week. As soon as I have more info I'll let you know.

These days I go to the butcher armed with pictures of what I'm after on my phone.

Hmm,

Can be a chore finding a good well priced butcher in Perth.

That they do a market NOR is good news, being I'm half way to Geraldton :)

I do agree though, whilst consistency is not the strong point Farmer Jacks do do ok, the one at Ocean Reef, even though not very large can have some good meat especially on a Saturday. Going there tomorrow in fact :)

My latest butcher to try is CK's Butchers in Kingsway Shopping centre.
He's using Leeuwin Beef which Im a big fan of & to be honest its a great way to sample Leeuwin Beef & then order a 1/4 carcas direct.

So far tried a chuck roast & porterhouse and both were deluxe.

I was in Drovers in Wanneroo yesterday and picked up a 4kg brisket for $27. Nice layer of fat and thick. Looking forward to dropping it into the Kamado soon.

How you travelling with this Chris? Any news?

@Mus-BBQ - let me know how you find the brisket, take photos! I don't go to drovers often, though when I have been they have only had brisket pieces and not full packer cut.
