Ribs! First ribs i've cooked so far, turned out awesome. DJ Jardines 5 star rub and something near to 321 cooking it, super tasty. DL Jardines 5 star sauce on the ribs in the foil and again at the end when the foil was opened up. Quite spicy for our tastes though, so might go for the DIY rub next time which isn't so spicy. I smashed a heap of them, but the mrs didn't have much :)

Looks good!

The Australian tase is different to the US, personally, I don't mind some heat, but most US rubs have too much Sugar and Salt for me. The DIY rub is a good choice, you can choose the level of heat!

Picked up a couple of nice red moses snapper.
Wanted spring rain spicy noodles with it so I cooked some king prawns, made a broth and cooked the noodles in that.
Tossed in herbs and fish sauce and chili and garlic.

Got to work on the fish

Art, No other word for it.
Though The fish is good, It would probably put me in hospital :( I'd need an epi pen .
Can't take my eyes off that slicing tool

Thanks Wayne, Noobbbq, Bentley, CS, and smokey, huge compliment!!

I did it again because I got a superb fish, bluebone.
Looks like a hump Wrasse doesn't it?
Anyway, got out the stainless Deba and got to work, I use a Japanese technique to filet to limit wastage.

Made rice again but this time I stir fried Kai Lan, shallots, Spring onions, garlic and chilies with oyster sauce.

Shallow pan fried after dusting with a special seasoned flour.

Fan bloody tastic fish!

The head and bones will be respected.
I'm now making a pot of Miso Shiru soup with them!
