I have one, its great for adding a little smoke to sauces and butters. Much better than liquid smoke or smoke powder

Chefs have been using these for a long time.
People that cannot spend the time using genuine smoking cooking techniques, or do not have the knowledge would use these I believe.
Another way to please people with the taste but not use the passion. :wink:

But if the meat is already cooked, it wouldn't take up the smoke would it?

No Idea. I have never shot my meat after cooking

If you have ever been to a posh restaurant, you will find that smoked dishes are served under a cloche which is filled with smoke with the smoking gun. When they lift the cloche, the smoke escapes. The food which is left is usually quite delicate and subtly infused with smoke. It is nothing like our BBQ, which is heavily infused with smoke. If you want to try this kind of food, go to these restaurants in Melbourne: Vue de Monde, Grossi Florentino, Attica, and Estelle. Probably go to Estelle, because it is the cheapest :)

Many top restaurants are also starting to use kamado's. Saw a new one recently at Brisbane's Southbank. CS http://www.biggreenegg.eu/cz/gastronomy

How great is this, as I have been saying for a while now that Barbecue will gain great exposure this way.
