Stuffed Pork Loin, Stuffing and Shrimp ABT's

Started with a pork loin filleted out and let it rest a couple hours in the fridge in Mad Hunky pork brine.

Sauteed some red onions, celery, and garlic in some butter.

Set the pork out and seasoned it with Tatonka Dust; added the veggie mix (red onion, celery, garlic), cubed pancetta, goat cheese and some fresh mozzarella cheese.

Rolled it up as tight, added some bacon and secured it all together with some grilling bands.

On the grill with some shrimp ABT's.

Tried something new with the stuffing - made it up on the stove top like usual but this time changed it up and formed them into stuffing loaves and added them to the grill for a little smoke and an added crunch to the stuffing. Here is the pork loin and stuffing in the grill on Frogmats.

Plated up and ready to enjoy!! The stuffings smoke flavor was good and it had just the right amount of crunch!! The pork loin was excellent and you can't ever go wrong with shrimp ABT's!

ABT is an acronym for Atomic Buffalo Turd. They ay are a stuffed jalapeño pepper wrapped in bacon. Stuffings can consist of pretty much whatever your imagination comes up with. Cream cheese and/or regular cheese is often one of the stuffing ingredients in an ABT.

What does Costco charge for thief differnt meat cuts?
I've thought about joining but it's an hour away so it would have to be worth it

I always buy skin off pork belly, skirt steak and salmon from there. I have a feeling the last time I think it was about $10-11 per kg

Those look great Mossy! Really like stufffed jalapenos (aka poppers) but find decent jalapenos hard to find down here. Atleast around here. Will keep looking...

Thanks for the inspiration and recipe

Did the Stuffed Pork Loin for an aniversary dinner and SWMBO really enjoyed it :D :)

Only had baby Boccocinni which worked fine but like the idea of the goats cheese for next time
