5kg Piglet
So I have lined up an approx 5kg piglet from a friend (5kg dressed).
It will be butchered for when I'm ready for it. Likely next month.
So i am wondering. How should I cook it? Which weapon do I choose?
Kettle, Kamado, kettle with roti.
Source an open mini spit?
I'm thinking dry the skin in fridge a overnight at least (Maybe in my office fridge so swmbo doesn't shoot me) and the roast hot for crackling.
Roast hot completely though? Or dwell down? Low and slow start and then finish hot?
Not really sure physically how big it will be so not sure what weapon to choose.
Do I invite a few mates around for some beer and pork? Or do I eat it all myself?

Thats a small piggy m8 I have been trying to buy one for a while for Christmas and the smallest usually is around 12 kg can only get them frozen with out the head DOH, going to get one from the farm and half the price of a dressed one and murder it myself, I have an extra stacker for my PROQ and hope to hang it standing up on hooks just have to work out what happens when its cooked and falling apart, how to keep it on the hooks? but it looks like still being around the 12 kilo mark, good luck with the cook should be yummmmmy when done

The last one I did was on the kettle roti, hot, fast and indirect. Crackling was amazing and it didn't last long

Either kettle or spit I reckon. Pleased to Meet You in Northbridge has a pig they do like this and it's great dinner theatre watching the kitchen pull chunks off it while it's rotating and the fat dripping off into the coals.

My DIY kettle roti recently did 2 boneless pork legs - both were 3kg, so that's a similar total weight. You just need to get the counterbalance pretty close.Nath wrote:Yep I think my diy kettle roti Will be the go. Hopefully it can handle it

The 240V motor that drove them was one that Aldi sold just prior to Christmas last year (it's a wonder they haven't had them back).
It's just as good as the no-name one from Woolworths I got for $20 (marked down from near 60) a few years back. My original plan was to double-stack my rotis, and use both, but I decided to run them on 1 stick, and re-arrange the coals to get more heat out towards the ends so they cooked evenly.

Well, I think I'm getting closer to a 10kg pig now. Hmm not sure my kettle roti will cope with that. Might have to re-think
