Pork ribs in the Dragon

Post by robduca »

Loving using the kamado dragon to cook on.
I try to use it at least once a fortnight at the moment.
Had a spare rack of beef ribs in the freezer and decided that's going to be dinner on the weekend.
Rub- toasted salt and pepper mix, garlic powder, cumin, coriander.

Decided I wouldn't mind chucking in some pork ribs to try as well. Got a couple from Coles and had a quick look for a rub recipe for them. Couldn't really find one so made one up. No idea what it will turn out like, but should be alright.
1 Tbs Salt
1 tsp Cracked Pepper
1/2 cup Brown Sugar
1 tsp Cayenne Pepper
1 tsp Paprika
1 Tbs Garlic Powder
1 Tbs Onion Powder
1/2 tsp Mustard Powder
Approx 1 tsp Chilli powder
I used a powder I made from my own home grown chillies. A variety called Fatalii which is much hotter than a normal chilli powder. If normal, I would use 1-2 Tbs

Does this seem ok? Missing anything?
Anyways, here are a couple pics

If you find decent ribs from a butcher here let me know. I get mine from the farmers market. Not great but better than everywhere else here
