Hi everyone.
I've been held up a bit and that leg I put in the brine on April 10 has only just come out and I intend to smoke it tomorrow.
Shouldn't be a problem being in brine for so long? Anyone here can advise.
Last year I brined a brisket for close to 3 weeks and it came out great when I made pastrami.

If the brine didn't smell "OFF" you should be OK. I'd recommend a purge in fresh water for a bit.

Brisket is a different story high acid meat with not a lot of fat.

I had it in water for about an hour Chris. Hope it was enough.
Had a good sniff of the brine and meat. No funky smells.
I was worried about this piece a bit when I first took it out of the cryovac. That is when it smelled a bit funky a it had just hit its use by date. I was reading somewhere pork that is cryovac'ed may smell like this at times as it gets closer to the use by date but I have never encountered it before.
As mentioned all smells were neutral so I'll go ahead and smoke it and use myself as a guinea pig for the first 1 or two days. The kids can have what's left. If there is any..lol

should be fine! Anything that has been in cryovac for a while will start to smell when opened...not just Pork.

Finished this not too long ago. Took it to an internal of 164F.
Tastes really good. The youngest was really wanting to try some and as per the rules she was not allowed till I use myself as the guinea pig.
I was smacking my lips so much and mmmmmmmmming at how good it tastes that she told me to "be quiet!" :lol: :lol:
