Re more salt next time..........Maybe try injecting some of the brine mix into the bacon. I did this and it does lift the saltiness also helps with getting it "pinker"

thanks for that guys we will give that a shot next time. by brine do you just mean the liquid that is formed when curing?

Kylie hasnt tried the snake yet havent had the meat to do it. thinking of maybe trying it tomorrow and using a piece of corned beef would that work or you think its too lean for it?urbangriller wrote:Looks Good Rob!

Corned Beef works...it will dry a bit, paint on a layer of mustard or marmalade.
