Prime Rib

Post by jminion »

I had the pleasure of cooking a 6 pound Rib Eye (Australian Wagyu)
Here is the recipe I used. All measurements US I will try fix that in the future.

6 pounds prime rib
1/2 cup cracked black pepper
1/2 teaspoon cardamom seed, ground
1 tablespoon tomato paste
1 teaspoon paprika
1/2 teaspoon garlic
1 cup soy sauce
3/4 cup vinegar

Trim fat if needed.
Combine cracked pepper and cardamom and rub prime rib.
Combine remaining ingredients and marinate the roast overnight, turn over a couple of times.
Bring roast to room temp then smoke at high pit temps (I used 350 degree F) until the roast reaches 127 degrees F (med rare finish). Let rest covered for 30 minutes before slicing.
