Hi Folks,
This is a special post for a lost mate. Who loved my homemade sausages.

These are my home made pork sausages made in April this Year.
Three batches here....Sweet Italian, Hot Italian & Chorizo.
I like to freeze half for fresh frozen sausages and the other half I give a quick blanch then smoke them.
I prefer to rack my snags than hang em in the smoker....get a more satisfying result that way imo.

Sorry to hear about your mate Russell, always hard when you lose a friend to becoming deceased.

Liked the look of your snags.....i especially love Chorizo.

Worst part about it is ,it was not the Big C that got him in the end....but the surgery. :( :(

Sorry for your loss, always hard to lose a friend. Do you get an even color on them using the rack? I smoke them in links, hanging and always get a bit in the middle where they touch that doesn't color up

I do appreciate that.
Yeah I do get a better colour using the rack for sure.
I have tried the hang method & you are right...always misses bits.
Plus....not that I do, but on racks you can roll em if needed.

I'm sorry to hear of your loss.

There is something special about the memory and comfort that good food can provide. My wish is that you remember your mate well as you cook and eat this food - and share it with others.

Again, my condolences.
