Yesterday afternoon I hot smoked this lot. Went to about 11 pm. All good and I'm pretty porked out by now.
Wet cured a 3.5 kg leg of pork and a 2kg butt.
Dry cured the bellies.
Smoking last night.
Bacon steaks this morning.
And some of the ham for dinner.

Not sure hoddo. I've never wet brined bellies, only dry cured them. But I have wet brined butts before for ham and bacon. Came out great.hoddo wrote:WOW nice work Gnol. Do you think dry cure is better for bacon?
