Pork party.

Yesterday afternoon I hot smoked this lot. Went to about 11 pm. All good and I'm pretty porked out by now.

Wet cured a 3.5 kg leg of pork and a 2kg butt.

WOW nice work Gnol. Do you think dry cure is better for bacon?

Not sure hoddo. I've never wet brined bellies, only dry cured them. But I have wet brined butts before for ham and bacon. Came out great.
