Slow roast beef chuck

About 1.3kg of good quality beef chuck rubbed with Smokin J's Santa Maria seasoning and ready for a stint in the kamado at 110c.

Gumb, did you get that from the Butcher near you that you always praise? Would like to try a piece of this myself.

Yes I did. The Basin Meat Supply, 1319 Mountain Hwy The Basin. Talk BBQ and Russell will be all over you. He loves it ! :D Great pork too. (the meat, not Russ)

The other one I like is Bill's of Belgrave on Burwood Hwy in the Belgrave shopping centre (just down from the super market). But The Basin is equally as good, if not better I think.

Thanks Gumb. Drive through Belgrave everyday now for work, so if I can't make the Basin, that's a good backup.
How long do you plan on cooking that Chuck for?

Not too much longer I hope....I'm getting hungry.

here it is after six hours. Internal temp is 80c

Bills is on the high side near the middle but more towards the roundabout end.

Well, it turned out great ! 8 hours in the kamado and i never had to fiddle with the vents as the Wang kept it under control all the way.

She liked it and it was mainly sliced but she did say it was a bit on the spicy side for her. I really did put plenty of Julian's rub on it.

Looks like I'm gonna have to give this a try after seeing your results. Hoping for this weekend, but can't guarantee I'll have the time or money. But it will happen eventually.

Hey mate, at what internal temp did you take it to ? I'm doing a big chuck roast in Xmas day and want it sliceable, but tender as. I'd normally cook it to pull, but I'm cooking chooks for lunch in the Weber. It's about 5kg as well, so time wise I'll need to cook it hot.
