First Brisket not sure if fail or success

Post by jjjones »

Did my first brisket in the GMG pellet grill today.
Friend bought half a cow so offloaded me part of the Brisket. Im guessing i got the point end?
Anyway, smoked at 225f for around 6 hours total. Used an Amazen tube for extra smoke. Foiled at 156f until internal temp was 200f.
The smaller end was really good, meat was very tender and moist. The thicker end however was kinda dry and tougher.
I guess i shoulda cooked it for another hour or two. Pics below. Sorry if i didnt cut it against the grain, not even sure if i did or not? Pretty noob to all this.

Maybe 10 minutes? lol. I got hungry. How long should i be resting it? Also, the foiling made the bark all soggy. Should i have un-foiled it at a certain time? Similar to 3-2-1 ribs?

I've only done brisket once, and after foiling and coking for a bit longer, I wrapped it in towels, and in to an esky for at least an hour from memory.

From my reading and a lot depends on size of piece but anywhere between 1/2 hour to 2 hours.
