Beef Short Ribs

Firstly apologies for not taking pics.

I picked up a 700g Beef Short rib from Vic's meat market (single rib). I slathered in Frank's Red Hot, and rubbed in salt and cracked pepper. 8 Hours at 145, indirect using hardwood lump charcoal with added hickory/mesquite mix.

Beautiful black bark, vivid red smoke ring and wobbly tender.

I have been looking for attached ribs (could have got Vics to provide) but now I think single ribs are the best as you get more bark and burnt ends.

In my opinion short ribs are better than brisket, but at $22 a kilo or $15 a rib (for this quality) it could get expensive if cooking for many.

That's a big single rib...

I can't quite remember but I think I normally purchase racks of 5 for approx $15-$18/kg and cook them at about 135 till ready.

If you're in Sydney, the aussie meat emporium in Alexandria does beef ribs for $9.99/kg with the ABA members card.

I tried them last week (Cape Grim Beef Short Ribs), they came up great @ 130'C for 7hr cook time.

4 Hrs Smoke, 2hrs Wrap, 1 Hrs Sauced, 1 Hr Rest.. :D

I'm sure Vic's Meats are a higher quality, but the AME are worth a visit if your looking to feed the masses.
