Gave this a run yesterday and the results were brilliant!

Great recipe but I did cook for longer that suggested - the cheeks simply melted!!

Just Getting started on the cook,
what should the Pit temp for the first 2-4 hours ?

It's Low and Slow....the first 4 hours is just laying down the smoke before braising.
