Hi Mick,

This is uncooked and not even really fermented, so in it's current form it won't keep indefinatly.

I wouldnt change the ingredients, but you could try cooking it like a preserve. I suspect the result will be good but a little different to the original.

I'd be more tempted to use this recipe and ferment it using this technique: http://nourishedkitchen.com/fermented-h ... ce-recipe/

The result will be a little different to the original, but just as good. It'd make an awesome Bloody Mary!

Mick, chilies are not a preservative, even though every man and his dog will tell you they are.
Salt and sugar are preservatives, although there are many more.

Be very careful, mistakes are fatal mate.

I have just made the sauce for this in prepration of making the chicken over the weekend.

It seems very runny compared to what I was expecting, I'm guessing that is fine though?

Yep, it is a bit runny. Avoid the temptation to add tomato the first time, tomato is loaded with sugars and burns.

Hi all,

Is the method of cooking direct or indirect?

Also, in reference to 'medium' heat, what temperature are we roughly talking about? 180C?

from the opening post:

"Flare-ups, of course, are inevitable. To avoid charring your food beyond recognition,
turn it often, move it to a cooler end of the grill, or adjust the flame."

which would indicate direct.

the post from rosecran mentioned indirect, 'like a reverse sear' - so there's
still some direct in that style.
