Hey Titch

I like to try different marinades, brines ect but a regular one i use is;
Measuements to your liking.....just experiment

French dressing........most inportant for me......did i mention French dressing
Garlic
Ginger
Tarragon - fantastic on chick wings
Cayenne
light olive oil
chilli
black pepper

I tend not to add salt as i always brine first anyway thats the most inportant step for me

After brinning, rinsing i sit them in above marinade - 4-6 hrs & slow cook @ 22f-250f.

I just had a look at Hsmax's wings and they looked just great. One to do for sure 8) .

I recently did Cheese and Bacon Wings which turned out to be a real winner. Not my own recipe but a good one to go with

here's one out of the bible ( smoke and spice )

WILD WINGS.

1 cup beer..................................1.5 tablespoons chili powder
1/4 cup molasses............................juice of one lime
1/4 cup smooth peanut butter.............1/2 teaspoon dry mustard
1/4 cup L&P worcestershire................1/4 teaspoon ground anise seeds
1/4 teaspoon salt.

and of course 20 or so wings.

combine the sauce ingredients in a large, heavy pan. simmer over medium heat for 15>>>>20 minutes, untill reduced by about a third. the sauce can be made a day or so ahead.

prepare smoker for BBQing, bringing the temp to 200f>>>>225f. grease a large pan .

trim the tips of the chicken, then cut each wing in half at the joint.

transfer wing sections and sauce to the baking dish. place the dish in your BBQ and cook for 1.25hrs to 1.5hrs, stirring the wings once or twice. the chicken should be cooked through and tender, and the sauce reduced to a thick glaze.

eat, enjoy

i marinate them in wishbone Italian dressing overnight and then add a heavy coat of montrael steak seasoning and cook at 325 temp for about an hr. when they hit the plate they disappear faster than a trailer park in a hurricane.

Only two ingredients for me Titch.
Louisiana Hot sauce and melted butter.
Rub Wings in hot sauce and marinate.
Then make a baste of the two above mentioned ingredients , Hot In a cup.
Grill wings on low and baste often.
They come out crispy golden brown if you can keep the grill nice and smooth, Low but just bubbling along so as to not burn the butter.
They are called buffalo wings, ain't none finer.
If trees screamed when we cut them down, We wouldn't. If they screamed all the time we would.
