How I Do Smoked Peking Duck.

Hi,
As you may have read elsewhere in the forum I am prepping a duck today for smoking tomorrow.
I have found this method to be an easy way to get a great result.
So a few picts. of my progress until smoking begins tomorrow.

***********Sunday update. Duck is in the Hark/Coola for a 1 hour smoke. Have decided to do this one a little different than my usual way.
I would usually do this in a gas smoker all the way...first hr @ 100c then I crank the smoker up high until required internal is reached.
Today I am doing this one @ 100cish for an hour then I plan to finish it off @ 190/220 final blast in the Z & G 4 burner, hood down.

Wow..look at the colour of that Duck....it's something I've really wanted to do for some time but the wife is not a fan of duck but bloody hell.....I am!! Love it.
care to share the marinate/brine or whatever else is in at the ziplock bag :)

Why thanks I do like a duck now and then, especially these days when they seem to be on special somewhere every other month.

That's a good looking duck and I will eagerly await the posting of the recipe.

Duck is a favourite around here with most so this will be an anticipated cook.

As your requests Davo & Angryman and anyone else keen to try. The recipe is posted in the recipe requests and cooking questions section.
As A.Man said duck is popular around the traps so I hope some of you others give this a go and show the forum your results.
