I posted these babies on instagram and facebook but thought i would give you guys the secret. You cant go past them. Best wings i have amost ever eaten. Lets call them Rustic Soul....... i dont know. You decide.
Recipe as follows.
A couple of kilos of wings cut in threes
Mix some dry chinese five spice powder, salt, pepper and about 2tbs of garlic , fresh but diced finely.
Smoke for about 45min on low around say 87-95 degrees c
Pull out and roll in tapioca flour
Deep fry till golden brown.
Then mix in a bowl with abc sweet soy
A standard light salty soy, just a touch
A splash of oyster soy
Thai basil and spring onions and....... shake and bake
