Hi Dave.

Although the recipe is more suited to Duck, I cant see why it wouldn't work on Turkey.

Give it a go and post back the results.



Well, I had a find indeed today................................ :P :P

Well, after the last Duck I did, I had a bit of a disaster go down :x

I hung my Duck, suspended off my usual,,, "cooking twine". It was a cheap brand that I picked up at a two dollar shop.

Drip pan set up underneath, then I left home, due to be back ready to bbq it, only to find the Duck laying it the drink :oops:

....the twine absorbed moisture, weakened and let go :x

I have searched high and low for a stainless steel Duck hook, just like the Asian Bbq shops use.

Today, I am at Cabramatta, browsing through a supermarket that I frequent and bang, there on the shelf was, you guessed it........

Time to get serious now :lol:

I'm doing 2 of these on the Roti tomorrow for the extended family.

We are having "Duck Day" tomorrow which we have every year to remember the good times we had with my deceased father in law who loved eating duck.

Shayne, a big thumbs up for that recipe, worked a treat

I wanted to do something different so I went out & bought a weber roti kit for the Cadac kettle. Only issue I came across was that the lid did not sit on the top ring.

Thinking something may be out of round I had a play but in the end had to take about 3-4 off the top edge all the way around with a grinder.

Followed Shayne's recipe although I had to double ingredients to keep bird submerged & I hung it in the fridge for 24hrs, not 12hrs.

Lookin pretty good Barrakooda.


If you can find a long rectangular container (I use a Tupperware one) so that the duck lays missionary style, you wont need to double the brine in the future.
