Shayne’s Grilled Tomato Chicken
I haven’t grilled this dish for a while so did it last night as it’s a family favourite
1 cup Tomato Puree
¼ cup Lemon Juice
2 Cloves Garlic, Crushed
¼ cup Basil, chopped
1 ½ tsp Lemon rind grated
EVOO
1 large Chicken, skinned and portioned
In a small saucepan, bring to boil Lemon Juice, half the Garlic and Tomato Puree. Back the heat off to simmer for 5 mins. Stir in Basil when cooled.
Combine remaining Garlic, Lemon Rind and oil in a large bowl. Add Chicken to marinate
Start your charcoal and pre heat your kettle to medium, and add the Chicken[img]http://i953.photobucket.com/albums/ae16/shayneh2006
then grill the chicken about 10 mins each side
Baste with the Tomato mixture when the Chicken rises to 155F. Remove, cover and rest once temps come to 168F. Temps will edge to 170F-175F (optimum) while resting.
