Chocolate Caramel Oreo Tart ....Brownie points!

Chocolate Caramel Oreo Tart ....Brownie points!
It's that time of year when potentially too much beer is consumed and you need a quick and easy "Get out of Jail" card.
Today I've made Chocolate Caramel Oreo Tart for Managements dessert, not because I need to pull the Get out of Jail card (yet), I'm just storing up Brownie points for Ron (for you Bentley: LaterRON).
Dead simple, no more than a half hour to make and 5 ingredients!
Dark Chocolate Caramel Oreo Tart
Ingredients
1 pack Oreos (about 36-42)
1 cup (225 grams or 16 tablespoons) butter, divided into two portions
2/3 (170ml) cup packed brown sugar
1 1/4 cup (315ml) whipping cream, divided in two portions
1 (1 x 385g) block dark cooking chocolate (or a bag of chocolate chips)
Finely crush the Oreos in a food processor or blender.
Stir 8 tablespoons of melted butter into the crumbs until well combined.
Press into the bottom and sides of a lose bottom pie pan. (put your pie tin on a pizza tray before you start)
Freeze crust for 10 minutes until set.
Combine the remaining butter and brown sugar in a small saucepan. Cook over medium heat, whisking constantly, until mixture begins to bubble.
Continue cooking, whisking constantly, for 1 minute.
Remove from heat and slowly whisk in 1/4 cup whipping cream until smooth.
Cool the caramel for about 15 minutes. Pour the caramel over the pie crust, and return to freezer for about 30-45 minutes until it is just chilled and set. (Pay attention...Don't Freeze it!)
Put the chocolate in a bowl.
Bring 1 cup of whipping cream to a carefully simmer over medium heat. (keep your eyes on this)
Pour the cream over the chocolate chips and let sit for 5 minutes, then whisk until a completely smooth chocolate sauce forms.
Pour the chocolate over the caramel and put the whole thing back in the freezer for 30 minutes, then back into the fridge, until ready to serve.
Now pay attention, here is the trap!
Always lift these pans by the edge, never the middle!
Put the pan on an upturned bowl and ease the edge away.
Before serving, sprinkle the top with a flaky sea salt to win extra points.
Do you think Management will notice a small piece missing?

What a great idea Chris, a non bbq section in the recipes area has been created and this is the first entry. I think I did it right. Pm me if you can't post to it.

another tip, get that blowtorch of yours out and run it over the top gently before serving. Should give you ultimate gloss and shine!

Mine didn't turn out right
The base and caramel were fine but my ganache was rock hard... I used 2 of the chocolate blocks you used (so 400g rather than 385g) but wouldn't have expected 15g of extra chocolate to make the top like solid chocolate. It was still delicious
I'll have to try again when another special occasion comes around!

If you used 2 of the packs of chocolate....each pack is 385g, so that'd be double the chocolate?StoneX wrote:Mine didn't turn out right

My local Woolworths and Coles only have 200g blocks. I can't even find 385g blocks online, where'd you find them?
Also, my Coles had the "Original Oreo Cookies" in boxes which have 3 small packs inside which was only 21 biscuits so I had to drive back down the street and buy another pack

Awsome, Time for a sly trip to ALDI and see if I can come up with a budget version
