Good stuff. :D
I've revised my method a little since then.
Less wet lemon juice, more dried lemon rind powder and more pepper.
I add the rind powder after the smoking otherwise it looses its fresh zing in the smoke.
The last one I did I didn't smoke it at all. Just DE hydrated a damp lemon juice salt and it was also good.
