Sriracha sauce

Made this sauce today and it's really good! So I thought I would share :)

350grams Serrano chillies (or red jalapeños) stemmed and seeded
4 garlic cloves peeled
4 Tbs apple cider vinegar
1.5 Tbs tomato paste
1.5 Tbs honey
1 Tbs fish sauce
1 tsp salt

Put all ingredients in a food processor and blend till smooth
Put into a saucepan, bring to boil and simmer for about 10 mins
When the white froth disappears it's ready
Put mixture into a blender and blend till smooth
Pour into jars and cool

If you want more heat throw a couple of super hots in there

Love it, I've never looked into what makes Sriracha before I just buy it, but that list explains a few things.
If trees screamed when we cut them down, We wouldn't. If they screamed all the time we would.

So is it a hot sauce? If brought in a pre made bottle! Like the sound of honey & garlic

It's not really hot hot but I suppose it all depends on what you can handle.

Next batch I make I'll be adding some hotter chillis to bump up the heat.
Really nice flavour to it! This won't be lasting very long, I can see this ending up on most meals.

I had heaps of them,but they do make the best sauce,ive tried a few others.
Roast them then add salt vinegar and blitz then add regular tomato sauce to taste.
I did it by eye and the amounts vary depending on how many are red on the bush at the time, but play around with it,its got a great taste better than any sambal oelek Ive bought.
