Cauli was marinated overnight then lightly smoked with a small chunk of macadamia indirect at 225F for about 45 minutes. When using a BGE with place-setter, no need to remove the barrier to finish off direct. Moving the cauli to the outer grill rim slightly chars. CS
Marinade
1 cup Greek yogurt (this one was low fat)
2 Tbs minced garlic
1 Tbs minced ginger
1 juice of a fresh lemon
1 Tsp Honey
1 Dash of salt
Combine all in a bowl, cut the colli into small florets discarding the main stem, coat and refrigerate for at least an hour or two, preferably overnight.
Salsa
1/2 cup yogurt
1 cup coriander leaves
2 cups mint leaves
2 small spring onions, or one large
1 small red chilli
1 Tbl EVO
1 juice of 2 fresh limes
