BBQ Corn with Mayo and Lime Dressing

This is a recipe modified from one I saw on the food network. When living in Florida, some of my Cuban neighbors would soak freshly cut corn in a mixture of water, lime, sliced chillies and herbs which in a day or so gets infused into the corn and certainly adds some bling. For something more tame, a cup or two of raw / brown sugar in water builds the sweetness. In either case no need to husk the corn to soak. Just straight in the bucket with the mix. CS

4 ears of corn
½ cup of light mayo
¼ cup coriander
1 cup light sour cream
1 lime
Chilli powder (I used Tajin = 5 different chillies, salt and dehydrated lime)
½ cup parmesan cheese

Mix the mayo, sour cream, coriander and lime and set aside.
Grill the corn keeping the outer sheath as something to hold on to
When cooked drizzle with lime juice and then add the mayo mixture
Sprinkle with parmesan
Sprinkle with Tajin
Sever with additional lime wedges
