Smoke Softened Garlic
This is something to think about doing next time you are chasing low and slow!
I peeled some garlic and covered it in Evoo, then let it sit in the BSK for 3 hours with a leg of lamb that was doing its thing at 107°C (225°F).
The result is Smokey Garlic Oil and the cloves are that soft they crush to a paste under a spoon.
I made a paste out of half of them with some crushed pepper and chopped mint. Then served that with the lamb.

I mixed some of the garlic paste with some herb, pepper and a little vinegar and whiped it on some pork chops this morning ready for Managements dinner tonight.
