Goose and Duck Fat are both low in saturated fats, Duck Fat is high in linoleic acid, Omega-6 and Omega-3.... So it more closely resembles olive oil, it has a high smoke point, a low melting point (14C) and unlike butter or olive oil, can be reused over and over.
It sounds stupid, but it is better (healthier) to use Duck fat than Butter!
Goose Fat is better IMO but harder to find.
