Baked Beans with Mango

Here's a nice simple way of preparing a summery baked beans side, very popular with both kids and adults in my household.

Ingredients:
Oil for saute
1 onion - chopped
2 cloves garic - chopped
150 grams chopped fresh bacon
1/4 cup maple syrup
half a fresh mango, mashed
1/4 cup brown sugar
Liquid smoke - 4 drops
1 tin baked beans (or prepare your own pinto/navy beans the long way - overnight in water)
1/2 cup mango juice

Method
Saute the onion and garlic in a pot for a few minutes until translucent
Add the bacon and saute for a few minutes more
Add the maple syrup, mashed mango, brown sugar, liquid smoke and stir until combined
Add the baked beans and stir until well mixed
Depending on how much sauce the beans have added, pour in some or all the mango juice
Bring the pot to a simmer and let the sauce reduce for a few minutes so it thickens and the mango flavours have a chance to infuse the beans

Variations
Add another dimension to the beans by stirring in some of your favourite chilli powder after you've added the beans
Adding a 1/4 cup of your favourite sweet BBQ sauce when you add the maple syrup.

Pour into a suitably sized bowl, add two strategically placed sprigs of coriander, then eat or serve with something porky such as pulled pork, ribs or loin :P

Nicely done! I can't believe only a couple folks responded. Mango is a great flavor to add to foods. This is good stuff folks.
