New to offset smoking in Perth

Hi guys, thanks for the add. I'm new to the smoking scene and have myself a Hark Chubby. Any tips from people who have used this smoker would be greatly appreciated. Been a bit hit and miss on my first few brisket smokes, but the char-grill bbq has been on point

Welcome to the forums, brisket is harder than I thought it would be but Ribs come up amazing in the offsets.
