Hi all
Have just joined Aussie BBQ Forum. I ditch the gas bottle have my Kamado Joe Classic arriving next weekend. Can't wait and am very excited. Have been researching the Kamado Joe by happy to receive any tips from experience "Joe" users.

There are plenty of tips and tricks in the Kamado section here, the joe's work the same as all Kamados. Have a little poke around and if you get stuck ask away.... My tip is don't overshoot your temp they are very hard to get back down. Enjoy

Thanks for the advice Muppet. I'm sure it will take some practice before I get temp control right. Going to roast chickens first until I'm confident and then move onto some of the more classics - briskets, beef shortie, pork etc. My thinking is if I destroy a chicken no great loss. It's not really so hard mate, for low and slow set your charcoal in a pyramid type pile and light the top, 30C from target temp close the vents to around a match width and fine tune from there. They take a little while to react to changes so just be patient. Give it a few minutes to react then go again from there. When you find the balance it will hold for hours, just don't keep the lid open for too long when loading because they can get a breath of air and run away from you.
