Hi all new member from Sydney starting out with a KAMADO JOE, had a gasmate $100 smoker for a week then found a good deal on kamado $600 and was only missing one wing.
this allowed me to get a iGrill what a great bit of kit.
All so have a weber Q200 for the fast cooks.
looking at making a fan heat control anyone made one?
Like a off set smoker but cant justify $4500 on my wish list.
Anywhere to get some good rubs in AUS?

Welcome Simon,

You'll have some fun here and get some great ideas and tips from the regulars.

Ignore the posts with squabbling in them, it's not hard to pick which ones are going to get messy and they don't reflect the generally great atmosphere here. Most of us are just here to learn more about BBQ.

For rubs and smoking dusts etc, have a look in the vendors section. There are heaps to choose from.Contact the vendors via PM or email and get info from them on what suits your needs.

The internet is also a good source of basic rub recipes if you want to start crafting a special one just be prepared to practice a lot and fail a little.

Have fun, take photos and share your successes.

Welcome mate, As Angus said the best bits of the chaff are at the bottom.
Question,$4500 for a fan controller? I think they are a few hundred. Was that a typo?
Dosent matter, it's better to feel the Joe for a bit to see how it kicks before fan control.
I don't use fan control but heaps do and it works really well for them.
I'd concentrate on steering it manually using a remote meat and grill temperature product.
It's fun and telling to boot :D

Welcome to the forum Simon.

There are Offsets around for a lot less than $4,500

Urban Griller sells the Hark Offset ( at around $600 I think ) & we import some offsets out of the US

If you check out the "Vendor" section at the bottom, there are a few of us either importing Rubs from the US or making our own Aussie Rubs for sale http://www.aussiebbq.info/forum/viewforum.php?f=46 and some of us have distributors in Sydney too.

Anyway, I'm sure you will be right at home here.

There is a Bar Be Chef offset in Sydney going for $100 at the moment....Look in the Flea Market section!

Thanks for the welcome.

Done some CostCo ribs friday night WOW they are amazing.
Grab a pork neck to do this week and put in a oder for a Wagyu brisket for the week after hope it goes well.
Is the hard offset smoker any good looks a bit thin is it hard to keep up the temp? Looked at Yoder smoker, looks great but $$$$$ not for me
